Dark Chocolate 75% Bolivia
The cocoa beans for this chocolate come from eastern Bolivia. The Beni region in the Iténez province, where they were cultivated, is known for an unusual natural phenomenon: a dry savanna that floods with water once a year, transforming into fertile soil. Various-sized areas emerge from the water, ranging from small islets to hundreds of hectares of plains. Around thirty-eight such islands are known as 'chocolate fields.' The local cocoa variety is unique because it has been isolated for a long time and hasn't undergone crossbreeding with other varieties. Its name, Beniano, is derived from the river that brings these annual floods. Cocoa is primarily harvested here from April to September. This sparsely represented variety offers a robust yet balanced taste characterized by spices and fruit."
