White Saffron Chocolate
Saffron is one of the rarest and most luxurious spices in the world, with the finest quality originating from regions like Taliouine and Jebel Saghro in Morocco. In these areas, around 1,500 Berber families cultivate saffron, relying on traditional manual harvesting methods. The climate of these regions, with hot summers and cold, damp winters, creates ideal conditions for growing saffron, which is harvested during a short period from mid-October to mid-November. The flowers are handpicked at dawn to preserve their high quality.
Saffron, known for its intense flavor, unique aroma, and golden color, is derived from the stigmas of the saffron crocus flower. To produce one kilogram of this precious spice, approximately 150,000 flowers need to be harvested and processed, which explains its high price. Saffron from Taliouine is renowned for its exceptional quality, thanks to the specific climate and altitudes ranging between 1,300 and 1,500 meters.
This saffron is not just a luxurious spice but is also valued for its health benefits. It contains compounds such as safranal and picrocrocin, which have antioxidant, antispasmodic, and antidepressant properties. Thanks to its origin and careful cultivation in the Moroccan mountains, saffron from Taliouine is a true treasure for gourmets and natural medicine enthusiasts alike.
